Chesapeake Bay-gnets

I’ve been poking around trying to find a good beignet recipe. I was inspired to try making them again after a recent trip to Nawlins, and the required pilgrimage to Cafe du Monde. Yum. But i wanted to try and make them on my own and not rely on the CDM boxed mix, i.e., make a simple yeast dough, rising in the fridge. Cooks.com had a couple of recipes which I tried. The first had so much liquid in it that I threw it out. Second was much better, and produced a light dough that puffed up royally when I fried the little buggers. Slightly different taste, however. I think I should have added more sugar.
